Vegan Plum Pie
This is simple shortcrust pastry with plum jam, covered with plums slices, sprinkled with almond flakes and cinnamon (vegan and gluten-free). It will be perfect for the upcoming autumn days.

Instructions
  1. Preheat oven to 390 F (200 C).
  2. In a large mixing bowl combine your flours, potato starch, icing sugar and whisk together.
  3. Add the softened coconut oil, soy yoghurt and water (as needed) and stir in. Mix everything thoroughly.
  4. Press the dough into a 13 x 9 inches pan.
  5. Bake in the preheated oven for 15 – 20 minutes, or until the crust is golden.
  6. Remove from the oven and cool.
  7. Spread the plum jam on top, sprinkle with cinnamon.
  8. Cover with the plum slices, sprinkle with almond flakes.
  9. Put back into the preheated oven (360F) and bake for about 15 – 20 min.
  10. Remove from the oven and cool.
