A delicious and very simple gluten-free rhubarb cake. Not too sweet perfect for coffee or tea. This cake is free from eggs and dairy, making it completely vegan! 13 x 9 inches oblong cake pan

Rhubarb Cake
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl combine your flours, coconut sugar, baking soda, baking powder, cardamom and salt. Set of aside.

  3. In a separate bowl combine your vegetable oil, plant based milk and vanilla past.
  4. Add in bowl with dry ingredients wet ingredients and mix everything thoroughly.
  5. Mix through, and immediately transfer the batter into the oblong cake pan. Smooth out the batter and make sure it is distributed evenly.
  6. Put rhubarb, like at the picture above. Sprinkle with almond flakes.
  7. Bake in a pre-heated oven for 20 - 30 minutes, or until a skewer inserted down the center comes out dry.
  8. Remove from oven and cool on a rack.
